Friday Night Pizza Night!! my healthier version!



My children are now at that age where they expect pizza every Friday night.  I guess we have started a tradition.  Traditions are wonderful and important for children, they build security, self-confidence and strength.



Making pizza at home from scratch really builds on that.  It also involves creativity, teamwork and patience.  ...and boy is it fun with kiddos!  They love to work with raw dough and you really can't mess up topping a pizza, right?  Anything they create WILL indeed taste wonderful, even if all the toppings are piled on one side ;)

I've been using this pizza dough recipe for quite a while, I have slowly been altering and making it larger as I go!  With 4 big eaters in the family we can certainly eat 2 pizzas easy!


Healthier Bread-machine Pizza Dough recipe
(recipe makes 3 med sized pizzas or one huge rectangle plus one normal sized)

2 1/4 cup lukewarm water
2 Tbs olive oil
4 cups white flour
1 cup whole wheat flour
1 cup cornmeal
2 tsp salt
1 tsp sugar
3 tsp yeast

Add all ingredients into the bread machine in order listed.  Select bread dough recipe, mine takes nearly 2 hours so plan ahead of time.

When finished, bring dough out and work with it and stretch out on a clean counter sprinkled with corn meal.

Load with toppings and Bake at a 425 degree pre-heated oven about 10-11 minutes.

As I am on our strict budget once again I calculate our pizza to be roughly:
$1.25 dough
.50 sauce(bought in bulk and freeze in small portions)
$1 toppings
$1.50 cheese (got on sale and coupon)
TOTAL: $4.25 for more pizza than we can even eat tonight!  I can indeed confirm that it does appear we have enough leftovers for lunch for us 4!  WOW!

A little hard work and I saved us about $20 versus picking up crummy Dominoes!  AND look at the healthy ingredients I snuck in- a single piece of this is WAY more filling!  Imagine if I did that for every meal!  (and I do- you know it! ;) )

(and no offense to Dominoes at all, we have enjoyed their pizza many times)
