Well, its June already and I have one month 'til I will be forced to wear a swimsuit.
I have learned so much since I started with newly learned healthy-lifestyle back in December. I have shed a lot of extra fat, gained muscle and best of all I have MAINTAINED it, for the most part!

Ive come a Long way on this journey!
The past year has been full of changes for me. Maybe its the fact that my children *nearly* sleep through the night now and I once again can think with a clear head. Maybe its just getting older. Maybe its my new life as a mom and property owner, we've been stationed here for almost 10 years now and are truly a part of the community now.
I don't know. But I like it.

Menu Plan Monday- 21 Day Fix= all clean eating!
Monday starts The 21 Day Fix, and I'm so excited to say my hubby is joining me this time! Its my 3rd round with this program and I love all Im learning from it. Changing my habits to healthy ones, making portion control automatic now. Love, love, love!! Here is what the whole family will be eating this week.....

This week marks Month #2 with my journey. I have learned so much! I feel I now have the knowledge and skills to keep this up easily. This now is a total lifestyle change and I LOVE IT! The best part? Its easy and hardly changes a thing in my daily life.....

fast frittata for the freezer!

Easy and fast, this 'recipe' can be adapted to pretty much anything you have on hand! Eggs. You do need eggs for this one! Everything else is pretty much flexible ;)

healthy zucchini pizza boats; paleo, 21 Day Fix, clean eating!
Its pizza night in our house tonight. Normally I would enjoy a couple huge pieces of empty-carb-laden, blood-sugar spiking, then dipping, emotion-high and stomach-ache inducing pizza.
Ahh, a classic American treat!
But not tonight. Tonight I am committing to my body.

African Peanut Stew for the Crockpot, Freezer Meal
We had 'the' decadent African Peanut Stew tonight... I was wise and turned it into a mini freezer-cooking session. So glad I did. It was freaking amazing!! I asked my family to rate it on a scale from 1-10, here are their responses:
my 7 year old: 'a 10!'
my 4 year old: 'well, if 2 is bad .....and 3 is okay .....and 4 is great.... then i give it a 4!' (whew)
my 36 year old: 'certainly a 12'

Of course its only monday and I have already veered from my menu plan..... but with this delicious aroma in the crockpot all day there was no way I could hold off 'til tomorrow.....

Feeling Amazing! down 6.5lbs! 21-Day Fit by Beachbody
I am starting to love Sundays. I started the 21-Day Fit program 2 weeks ago and have enjoyed every minute of it, well, thats not totally true... I turned down a GIGANTIC plate of greasy nachos yesterday and it made me frowny-face :(
but right now Im pretty gosh darn pumped!

sunday check in
i started the 21 Day Fix last tuesday. i have been eating a healthy diet every. single. second. since. i have done my 30 minute dvd workout every day this week.
and here i am, 6 days later, feeling stronger and slimmer. i thought it was all in my mind. then i took measurements.

When I opened up my package I was a little shocked to see how small my food containers were. After doing the math I discovered how many I was allowed during the day. Eh, it seemed somewhat reasonable.. I was committed and going to give it my all!
Focusing on wholesome, healthy foods is key in this plan.
I started this program at 152lbs and 5' 10". This put me in the smallest food plan. I am currently on day 5 and I pretty much feel like I have this down. Easy peasy.
I thought it would be fun to document a full days meals, just examples of some of the foods I am eating on this clearly laid out plan. And to show that healthy food is the way to go. NOT starvation.
Focusing on wholesome, healthy foods is key in this plan.

yum. this was delish, and so easy! i used NO oil and NO sweeteners, just simple ingredients! plan about a total of 2 minutes to throw this together!

quick 21-day fix approved Taco Soup in the crock-pot
okay friends, i've started up a new plan and I'm hitting it HARD. being winter and all i need my satisfying soups so i whipped this bad boy up. its awesome. and so dang easy. and really dang healthy. and the family LOVED it. im a winner.
taco soup. but healthy. did you know taco soup was the first meal i ever cooked my husband? i was living all by myself in a tiny little loft apartment with a phenomenal view of the water.... ah, to be 21 again....
yeah- i also haven't talked about my new commitment yet but I'm pretty certain its changing my life. I'm on day 3 and already noticing a huge difference... more on that later.
okay, back to the mouthwatering soup!
