fast frittata for the freezer!






Easy and fast, this 'recipe' can be adapted to pretty much anything you have on hand!  Eggs.  You do need eggs for this one!  Everything else is pretty much flexible ;)




The first step is to whisk together 6 eggs per frittata you want to make.  I do 1.5 eggs per person, so adjust as needed!  Then whisk in a tsp of salt per batch, some pepper if you wish and herbs...  a little plain yoghurt or a dash of milk is good too!



Next, prep your dishes.  Oil them and add your filling...  this can be any veggies, cheeses, meats or fresh herbs.  I love to make different varieties if I am making a bunch at once!

I just did a quick Mediterranean version for these using things I had in the fridge; feta, greens, onion, oregano and kalamata olives.  (did i spell that wrong?  autocorrect suggests i refer to them as Kalamazoo olives....  snicker, snicker, snicker!)

Last pour your egg mixture evenly over your prepared dishes, pop into a preheated oven at 350 degrees for about 30 minutes.  





Once cool I wrap these in plastic wrap or foil, pop in a gallon ziplock bag and label.  They stack very nicely in my freezer!  Simply pull one out and thaw it in the fridge for a simple dinner!  I just warm mine on a large platter before serving.

Fast Frittata

6 eggs
a splash of liquid- milk, yoghurt, cottage cheese are good options
1 tsp salt
herbs, veggies, meats and cheeses

Whisk liquids.  Prepare baking dishes by oiling them and laying in your solid foods; meats, cheeses and veggies.  Pour egg mixture on top and bake in a pre-heated oven at 350 degrees F for 30 minutes.
