oh, these people..... and now for the details........
I originally started making this soup years ago, but just recently simplified it a tiny bit, added extra lean protein and turned it into a freezer to crockpot meal! And its pretty much healthy, fitting in fairly well with my 21 Day program, and you better believe its made with quality whole foods. Duh.
I seriously cannot get across how wonderful this soup is! SO YUM!
I used my crockpot for one dish and two gallon ziplock for my other 2, so- I tripled this recipe just simply by doing each step 3 times at once. Easy Peasy!
African Peanut Stew
For the big bag:
1 or 2 sweet potatoes, diced
1 large onion diced
2 chicken breasts, whole is fine- they will shred themselves
For the small bag:
1 tsp garlic powder
1 tsp cumin
1 tsp ground ginger
1/2 tsp chili powder
3 tsp of tomato powder*
On the small bag I wrote instructions:
Add contents from large bag to crockpot, pour in 6 cups water, 1 tsp (coconut) oil and cook on low all day. (6 hours-ish)
Stir soup, add contents of small bag PLUS: 3/4 cup natural (chunky) peanut butter, 1 big tsp fresh grated ginger and 2 Tbs bullion stock concentrate(Costco).
Let cook another hour. Right before serving add a tsp or more of salt- to taste, then stir in a big handful of greens, I used spinach. Serve and top with fresh cilantro and maybe garnish with a few roasted peanuts!
*if you don't have tomato powder then a small can of tomato paste will do just fine!
Like things spicy? This really kicks some a$$ with a little Sriracha on it!
Simply toss your spice bags into the gallon bag and seal, store your dinner in the freezer 'til ready to use! No need to thaw these bad boys- just be sure you dump them into a COLD crockpot, adding cold water before turning the heat on!
and, no- I'm not fancy enough to have a print function on my blog so you will indeed have to highlight and paste the recipe.... but its worth the extra click- I promise you that! :D
What does this equate to on the 21 Day Fix? i roughly estimate a serving to be 1.5 cup and be:
1/2 green, 1 red, 1 blue, 1 orange and 2 tsp :)
