Of course its only monday and I have already veered from my menu plan..... but with this delicious aroma in the crockpot all day there was no way I could hold off 'til tomorrow.....
I tossed 2 large frozen chicken breasts into my medium sized crockpot this morning, dumped on about 1/4 cup lime juice and 1/2 cup salsa... a little garlic and chili powder then let it cook on low all day... you can see here that its literally falling apart. Just how I like it!
Im keeping the rest of the chicken in a glass dish to use up for the next few days.
I sautéed some veggies in a little coconut oil, opened up some really good refried black beans and topped with cheddar. I love my cheddar!
This dinner was amazing! Filling and healthy!
On my 21 Day Fix plan it fits perfectly in with my day. Hard to believe this counts as healthy ;)

ReplyDeleteyeah! while I do enjoy counting calories, i just cannot do it for any length of time.. and i always get too busy or tired to keep it up. Then i discovered the 21 Fix, which is a Beachbody program, but its an easy one!!! It comes with containers and instructions on how many you can have, and lists of what you can put in them! as well as recipes, and all that stuff. It came with the workout program I'm doing right now, which has the 30 minute daily workouts. Its a kick-ass program I tell ya! Fool proof... and mom proof ;)
