Freezer Chicken Tikka Masala

I am supposed to be doing the Pantry Challange but when i see chicken breast marked down to $1.04lb i buy 10lbs!  because that deal is too darn good to pass up.





I diced up 5 pounds and made dinner as well as a few freezer meals.  Chicken Tikka Masala.  Soo good!  My family devoured it :)



Easy recipe and super affordable:
1.5lb chicken 1.56 (or normally $6, maybe you can find a bargain and get it for $3!)
Coconut milk 1.20
Tomato Sauce .80
Garlic .20
Yogurt, spices, etc .25 (i made my own Garam Masala)
Rice .50
Peas .50
total: $4.76

OH, and I opened up a packet of Madras Lentils to accompany this...  Costco price at about $1.40 so that actually puts our cost just over the $5 mark....  now at $5.91, but we are a family of super big eaters...  possibly you could do without this addition or make your own lentils for pennies :)

I put tonights dinner in a bowl to marinate and threw the rest in foodsaver bags, i plan to pop those in the crockpot later in the next month or 2!



Yup, another $5 dinner!

I used this Recipe HERE is delicious! Of course I didn't add any of the spicy spices as my kiddos aren't ready for those yet, but it was still amazing!  Give it a try, we loved it and as always, no leftovers!
