We love tuna in our house. 'They say' tuna is cheap. Its not when you only like the good stuff. We don't like cheap tuna in our house, the quality cans are about $2 each. For lunch the 4 of us would need 3 cans, making the base of the meal start at $6 before additions, bread, veggies, etc. That is unfortunately out of our budget.

A popular vegan substitute for tuna is garbanzo beans. Hard to believe, right? I buy them in bulk, soak and cook them myself in the crockpot. Funny thing, they do sorta smell like fish. Even my cat was fooled! He is elderly and lazy and only comes into the kitchen when he smells meat!!! I had to laugh :)

1+ cup cooked, drained garbanzo beans
1 can tuna
4 stalks celery
1/4 sweet onion
3 Tbs mayo
2 Tbs olive oil
4 Tbs lemon juice
1 tsp salt
dash of black pepper
Chop my veggies in the food processor, then my garbanzo beans. Add the rest and adjust as needed! Yum! Of course the vegan versions would be sure to use vegan mayo and NO tuna at all- i've done that too and its also good!
