Easy Crockpot Irish Colcannon inspired meal

Dipping into my Irish heritage i truly LOVE potatoes and cabbage.  LOVE THEM.  Especially cabbage.  Cant get enough, just ask my family ;)




This is a quick throw together version of a traditional Colcannon dinner.  Hearty and filling and super delicious- my 7 year quickly old claimed the leftovers to bring with her to school for lunch the following day.




This recipe is very forgiving and you can toss in whatever you want.  I grabbed a pack of Guy Fieris Tequila Lime sausages at the store and holy goodness Im so glad I did.  They added a fantastic flavor punch to this delicious dish!

here is the recipe I created, feel free to sub in or out your own ingredients!

Easy Crockpot Irish Colcannon inspired dish

6 big red potatoes
1/4 cup water
1/8 cup olive oil
1/4 white wine (or water or stock)
2 Tbs hearty mustard

1 pack sausages in casings, sliced
4 huge handfuls chopped kale
1/4+ cabbage slicked thickly

Simply dice up your potatoes and toss in the crockpot, add the liquids and stir, cover and cook on high for about 3 hours.  Remove lid and add the rest of the ingredients, cover and cook on low for a few more hours.  Top with salt and pepper and don't fight over the leftovers, if there are any ;)
