just freshly back from a long family trip out of state. we enjoyed our fair share of treats, now Im ready to get back to healthy eating again and so is my family!
i have an added challenge as well this week. my husbands car is still in the shop, it did indeed get smashed by a tree during a storm and turns out the repair process is lengthy.... oh my! he may need my car everyday for work, I am unsure yet, this will make grocery shopping more of a challenge, I did squeeze in a really quick trip to Costco this afternoon, it will certainly help out my menu!
Monday:
turkey and veggie soup using creativity, salad and bread
Tuesday:
tacos with refried beans and whatever veggies I have on hand shredded for toppings! tortilla chips and salsa
Wednesday:
bbq chicken in the crockpot. fresh bread and hopefully a shredded cabbage to go with it! as a backup i will make a shredded carrot balsamic salad just like this, which i've made probably 20 times and we love it!
Thursday:
baked lemon chicken w/ olives and roasted broccolini
Friday:
chili- keep an eye out for this one- i plan to make a pre-made mix and post the awesomeness!!!
Saturday:
sausage and peppers (a freezer meal, my last one- i will do again and post the easy recipe soon!)
Sunday:
pasta night. bread and salad and wine too!
